Pasta Chorizo – a real taste success

- 2 shallots
- 4 cloves of garlic
- 400g minced chorizo (alternatively 4 chorizo sausages)
- 2 tbsp tomato paste
- 1 can crushed tomatoes
- Thyme and oregano (fresh or dried)
- 1 tbsp fennel seeds
- 2-3 tbsp white wine vinegar
- A splash of water
- Cayenne pepper (for those who want extra heat)
- 1dl cream
- 1 package of spaghetti
- Parmesan cheese to grate
Do this
Finely chop the shallots and garlic so that the aromas spread throughout the kitchen.
Fry the minced chorizo in a large pot until it gets a nice color. Add the onion and garlic and let them become soft and shiny.
Stir in the tomato paste and spices, let it fry for a minute so that the aromas are properly drawn out.
Pour in crushed tomatoes, water and white wine vinegar – now the sauce is starting to take shape.
Let simmer under a lid for at least 30 minutes, the longer the better – and let the aromas build up your appetite.
Finish with cream towards the end and let simmer so the taste becomes extra creamy. Feel free to taste and add extra spices if you want more pressure.
Cook the spaghetti al dente according to the package – the slight resistance to chewing makes all the difference.
Turn the spaghetti into the pot, mix the sauce thoroughly and serve immediately on a plate. Top with generously grated Parmesan and enjoy every bite!
